Cooking with Casa: Steak Tips with Red Wine Reduction Sauce

I have a series of dentist appointments so I broadcasted the show on a Sunday instead of the scheduled Wednesday night at 8 PM EST. This meal may seem like alot of work, but it was very simple to make. I had my first steak tips in Boston, and it was great. It’s a good cut of steak without paying premium prices. Steak tips are basically the tips of the sirloin steak. Don’t get cubed chuck or cubed round steak. Those are chewier cuts and will not work well for grilling. I served the steak tips with a red wine reduction sauce, roasted brussel sprouts, and garlic Parmesan red skinned mashed potatoes.

Chicken Schnitzel Slider

A couple of weeks ago, I decided to make a chicken schnitzel sandwich on the cooking show. While I was picking up some buns, I saw Martin’s Potato Rolls, and there was a sticker that said ‘Great for Sliders’. At the last minute, the sandwich became a slider with a zesty garlic mayo and fresh basil pesto sauce.

It’s my third show so far, and the schedule is still rough. Between work, gym, and dentist appointments, I’m trying hard to not let the show slide off the table so much. Root canal is no fun, but I found out that I enjoyed running. The first two weeks at the gym are painful, but the pain is subsiding, and I’m starting to enjoy getting all smelly and sweaty. However, I’m straying from the topic at hand.

Mussels with Thai Coconut Curry (w/ Sweet Potato Fries)

Yes, I am very late in posting recipes. There is a level of respect to those who blog because I’m still trying to be a better blogger. I eat my food without thinking about snapping a picture. I cook without posting a recipe, but it’s not about me anymore. I’m here to share my love for food and cooking with you guys out there so I need to stop being so selfish.

Moules Frites (Mussels and Fries)

It was Belgian Restaurant Week in New York City, but I was so busy that I couldn’t go and grab some moules frites and a pint of Belgian beer. Instead, I decided to bring the food to me! For the show, I made moules frites 2 ways – Mussels in white wine served with fries and Mussels in coconut Thai curry served with sweet potato fries.

The live show started a bit late because I have to get some mussels. Chinatown didn’t have any, and I went to the Lobster Place on Bleeker Street, and I was in luck. One great thing I like about the Lobster Place is that the guy there pick out the good ones and chuck the dead ones out for me instead of scooping it all into the bag. While I was there, I saw a group of fireman and thought there might be trouble in the store, perhaps a gas leak. Turns out the firemen just wanted to get some seafood for dinner. I rarely see firemen up close, but these firemen are smoking hot! It’s like NYC decided to round up the hottest guys and slap uniforms on them. AND they cook! My goodness. What a way to a woman’s heart.

Pasta Primavera with Roasted Vegetables and Shrimp with Fresh Mozarrella

It was my first re-launch cast, and it was great! I want to thank you everybody for tuning in. I had a great time, and I love my new set up. It does need a bit of tweaking, but please have patience. It’s a one woman operation after all. :)

For the show, I made pasta primavera. What’s different about this recipe is that the vegetables are roasted. Roasting add lots of depth to the flavor. It also ensures that my sauce doesn’t get too watery when I put all the ingredients together and toss.

The result is light and creamy with a lot of zest from the lemon juice. It cuts through the fat and doesn’t leave you feeling weighed down after a meal. If you are allergic to shellfish, feel free to substitute chicken or go vegetarian by adding more vegetables.
